Honey Jaguar is a delicious honey processed coffee from the Tarrazu region of Costa Rica, from the San Diego Mill community. A 10 cent/lb donation charged to roasters s matched by our sourcing partner for this coffee and donated to help preserve Costa Rica's dwindling jaguar population.
Honey Processed coffees exhibit a smooth, sweet flavor profile. This comes from drying coffee cherry that has had the skin removed but leaving some of the fruit mucilage that surrounds the seed. Dried and rotated on raised beds, the mucilage slowly begins to break down, converting compounds into sugars, some of which penetrate the inner seed. The sweetness this imparts to the coffee is why the word "honey" is used to describe this processing method.
